Recipe (makes 4)

250g Strong white bread flour

150ml warm water

7g sachet yeast

10ml olive oil



Add the flour and yeast to a bowl, mix together.

Add in the olive oil and water and using your dough hook fitting on your mixer, mix for 5 minutes on a medium setting.

The aim is to get the dough to be elastic so that when you pull it it comes back by itself. Once you reach this point (after 5 minutes) form the dough into a ball, cover with a damp tea towel on a lightly oiled baking tray to prevent sticking.

Leave it to rest for 30 minutes.

Ok, now your ready to roll out!  Sprinkle your worktop with flour.

Divide the mixture into 4.

Roll out each flatbread till it’s about side plate size and about an inch thick.

Heat a griddle on a high heat and cook each flatbread for a minute per side.

Job done!

You can flavour them if you like…. do this before you divide and roll out. I did 2 plain and 2 garlic and chopped coriander.
