Mozzarella and Tomato Tart


1 sheet of ready rolled puff pastry

2 tbsp tomato puree

1 ball of mozzarella (thinly sliced)

1 punnet cherry tomatoes (halved)

A few fresh basil leaves

Black pepper

1 beaten egg for egg wash

** Alternative is Feta cheese and some sun dried tomatoes mixed in with the cherry tomtoes


Roll out the puff pastry and then score around the edge (about an inch from the edge) so it looks like a picture frame!

Spread the tomato puree onto the pastry but not onto the framed bit, leave that free of ingredients.

Place all the sliced cherry tomatoes and sliced mozzarella cheese onto the tomato puree with a little sprinkle of black pepper.

Brush the outside “frame” of the pastry with the beaten egg wash.

Bake in a pre heated oven 180 Gas 4  for about 20-25 mins till golden.

Add the basil leaves once it has cooled slightly.

Serve with whatever you like… great cut into small squares as finger food if you’re having friends round!
