Recipe of the Week:  Breakfast Egg Muffins (Makes 3 muffins)


2 eggs

2 cherry tomatoes, finely chopped

30g grated Cheddar cheese

Spinach (I use 1 frozen cube, defrosted)

1 slice of Parma Ham

Salt, pepper and a few chilli flakes

Dash of Worcestershire Sauce



Add the ingredients in layers into a muffin tray, beat the eggs with salt, pepper, chilli flakes and Worcestshire Sauce in a jug, then pour onto the fillings.

Bake at 180’  Gas 4  for 15 mins till golden.

Muffin cases might be easier to use, it depends how non stick your bakeware is!

Some other great combinations are

Feta, Tomatoes and Basil

Grated Cheddar Cheese, mixed chopped peppers

Grated Cheddar Cheese, Cooked Sausage and Bacon cut in small pieces

Grated Cheddar Cheese, Red onion flinely chopped, Spinach

Finely chopped mushrooms, grated cheese, tomatoes

The list of combinations could go on and on …. have fun with your flavours.

Remember to keep the pieces small so everything cooks evenly.

These freeze really well too so you can increase the recipe and batch cook and freeze. They only take about 10 seconds in the microwave to cook once defrosted.
